I just want to try out models like this one

Hi, we're relying on the inference API to deploy new model, so if it's hosted there we can host it. So the note on that page also applies for us:

This model does not have enough activity to be deployed to Inference API (serverless) yet. Increase its social visibility and check back later

Otherwise you can host it yourself, the codebase behind HuggingChat is fully open source: https://github.com/huggingface/chat-ui/
